Seafood Fried Rice (serving for 1)

The dish is quite filling, and best of all you won’t break your back, or even a sweat, trying to prepare it. Fried rice may sound like a plain and boring dish, but there are many ways to spice it up. Seafood fried rice, for example, blends tasteful pieces of shrimp and squid into the concoction. This is a perfect delight to serve for yourself, your family, or any guests you are trying to impress with your culinary talents.

Ingredients
4 ounces frozen uncooked shrimp and squid (unshelled)
1 teaspoon soy sauce
1 teaspoon salt
2 eggs
3/4 cups carrots (shredded)
1 cup frozen peas
1 Tbsp vegetable oil
3 green onions and tops (chopped)
3 cups cold cooked rice

Method:
1. Heat 1 Tbsp oil in frying pan.
2. Add in seafood with salt and fry till seafood is cooked.
3. Add in carrots and peas, and mix well. Continue fry for 1 min.
4. Remove from pan and set aside.
5. Heat remaining oil in the pan and lightly scramble beaten eggs.
6. When just beginning to set hard, add rice and stir fry mixture for 2-3 minutes.
7. Add shrimp and crab squid with soy sauce and blend well.
8. Ready to serve.
